When assessing an all-rounder, ask to see the horse work in at least two of the disciplines it is described as suitable for. A horse sold as "dressage and jumping" should demonstrate a basic outline and acceptance of the contact, not just the ability to clear a course of poles. Versatility is genuinely valuable but often overstated: a horse that does several things adequately is not the same as one that does two or three things well.
When browsing All Rounder Horses, match the horse to your experience, not just where you are now but where you want to be in the next year. A young or unschooled horse suits confident, experienced riders. If you're still developing, a well-schooled older horse will teach you more and carries less risk.
